In a bowl, combine the beef, soy sauce, garlic, ginger and cornflour. Mix well, cover, and marinate for at least 20 minutes (or up to 2 hours for a deeper flavour).
Heat a large frying pan over a medium to high heat, add a film of oil and quickly cook the beef until it browns.
While the beef is cooking, in a small bowl whisk together the hoisin sauce, soy sauce, chiu chow chilli oil, honey, rice vinegar and sesame oil.
When the beef is just cooked, add the spinach, snow peas and edamame to the pan and toss until the spinach wilts and the edamame are bright green. Pour over the sauce and quickly toss to coat.
Distribute the rice between plates and top with the beef and greens. Sprinkle with spring onions and sesame seeds to serve.
