How to make it

  1. Marinate the chicken for 15–20 minutes. In a small bowl, combine chicken breast, soy sauce, olive oil and black pepper.
  2. Preheat oven to 190°C (375°F). Place chicken on a lined tray. Bake for 12–15 minutes, depending on thickness.
     
  3. Mix 1 tsp honey with a few drops of lemon. Brush over the chicken. Return to oven and bake for 1–2 minutes until glossy and lightly caramelised.
     
  4. On a plate or shallow bowl, arrange: Mixed greens, and cherry tomatoes. (Optional: nuts/seeds for crunch)
  5. Optional: Dress the salad with Lemon juice or rice vinegar
  6. To Serve slice the honey soy baked chicken and place it over the salad. Finish with a small touch of pepper or sesame seeds if desired.
