Cook the fries according to packet instructions either in the oven or an air fryer. Place the sliced cucumber in a small bowl with the rice vinegar, sugar and a pinch of salt. Toss well and set aside while you make the burgers.

Place the pork mince, char siu sauce, soy sauce, crushed garlic, ginger, breadcrumbs and spring onion in a large bowl. Mix until well combined, then shape into patties, 1 per serve.

To make the glaze mix the second measure of char siu sauce, water and sesame oil together in a small bowl.

Heat the oil in a large frying pan over medium heat. Cook the pork patties for 5–6 minutes on each side, or until cooked through. Brush with the char siu glaze during the final 2 minutes of cooking, turning once so the patties become glossy and sticky.

Toast the burger buns. Mix the mayonnaise with sriracha.

Spread the buns with the spicy mayonnaise. Fill with lettuce, carrot, a pork patty, quick pickled cucumber and coriander. Serve with the oven fries alongside.
