How to make it

  1. Heat the oil in a large frying pan or wok over high heat. Add the pork mince and cook for 5–7 minutes, breaking it up with a spoon, until browned and starting to crisp.
  2. Add the onion, garlic and ginger. Cook for 2–3 minutes, until softened and fragrant. then Add the cabbage and cook for 3–4 minutes, stirring often, until wilted.
  3. Stir in the brown sugar, soy sauce, oyster sauce, fish sauce and rice vinegar. Cook for 2 minutes, allowing the sauce to reduce and caramelise slightly.
  4. Drizzle over the sesame oil and toss to coat. Season with salt and pepper to taste.
  5. Serve the caramelised pork over rice, topped with spring onions coriander and sesame seeds.
