Cook rice according to packet instructions.

Toss the sliced beef with the cornflour and a pinch of pepper. This helps keep the beef tender and gives the sauce a glossy finish. Whisk the sauce ingredients together in a small bowl until smooth.

Heat a drizzle of oil in a large frying pan or wok over high heat. Cook the beef in 2 batches for 1–2 minutes, until browned but not fully cooked through. Transfer to a plate.

Add a little more oil to the pan. Stir-fry the broccoli for 3–4 minutes, adding a splash of water to help it steam slightly while staying bright green.

Add the garlic and ginger, then stir-fry for 30 seconds until fragrant. Return the beef to the pan. Pour in the sauce and toss for 1-2 minutes, until the sauce thickens around the vegetables.

Serve with brown rice along side and scatter over spring onions.
