How to make it

  1. Bring a large pot of water to boil. Add a good amount of salt. ( equivalent amount to pasta cooking ). Insert washed spinach into the pot, the root side down. With chopsticks or spatula, push down the rest of the spinach into the hot salted water.  
  2. When the water starts to boil again, remove from heat. Tip the spinach through a shive, then rinse in cold water. This will stop the lovely bright green colour to go dull. Squeeze out the excess water. 
  3. Combine spinach with garlic, soy sauce, sesame oil and spring onion. Sprinkle sesame seeds and serve.
