Cook the noodles following packet directions. Drain well and set aside.

Meanwhile, heat the oil in a wok or large frying pan over high heat. Stir-fry the chicken, in 2 batches, for 2 minutes or until golden brown and cooked through, transferring to a plate once cooked.

Combine the onion, garlic, ginger and broccolini in the wok or pan. Stir-fry for 4 minutes or until broccolini is tender, then return the chicken to the pan.

Add the oyster sauce with ¼ cup water and nuts. Stir-fry for 2 minutes or until heated through. Season to taste with soy sauce. Add the noodles and toss to combine.

Divide noodles and stir-fry among serving bowls. Serve immediately topped with coriander.
