How to make it

  1. For Cooking Granny Smith Apple:

    • Clean and peel apple, remove cord then cut apple in wedges at the thickness of 3cm;
    • Heat up wok/pan, add cooking oil and ensure spread evenly in wok / pan;
    • Place apple evenly face down and allow it to cook till golden brown in colour then turn over to another face;
    • While both side giving a good colour of golden brown, please add in sugar and caramelize it to coat on the apples;
    • Pour in apple cider and juice, then add in LKK plum sauce, ensure it diluted in liquid;
    • Add in lime juice and zest, gentle the heat and allow it simmer to a good consistency of liquid capable to coat on apples;
    • Remove work / pan from heat and emulsify butter in apples;
    • Pour over to a plate and set aside.
     
  2. For Tofu Cream:

    • Steam silken tofu in steamer tray for 5 minutes;
    • Place silken tofu in Vitamix, add in sweet soybean milk and sugar, then blend still it smoothly in texture;
    • Bring mixture to boil, add in agar-agar. Stir till it fully diluted;
    • Strain mixture by using fine strainer and pour into a swallow tray and keep in fridge to set;
    • Once it set, bring it out from fridge and put it back in vitamix and go for high-speed blending the mixture as gel in texture. Set aside.
     
  3. For Plum and Lime Gel:

    • Place brown sugar in low heated wok / pan, do not stir and allow it nature get melted over the heat;
    • Add in lime juice and LKK plum sauce. Check texture, add water if too thick;
    • Once it boiled, add in agar-agar, stir well till it fully diluted in mixture;
    • Strain mixture by using fine strainer and pour into a swallow tray and keep in fridge to set;
    • Once it set, bring it out from fridge and put it back in vitamix and go for high-speed blending the mixture as gel in texture. Set aside.
     
  4. For Butter Toast:

    • Spread butter on toast, sprinkle sugar on top and baked in oven at temperature of 160 degree celsius for 25 minutes till golden brown;
    • Let it cool down. Use a pot or mortar & pestle crushed it into crumbs.
     
  5. To Assembling This Dish:

    • Place crumbs on the middle of the plate;
    • Place apple wedges in order from top to bottom – standing position;
    • Squeeze tofu cream and caramelized plum & lime gel alternately from top to bottom.
  6. Garnish:

    • Sprinkle around with micro mint.
    • Good to serve with a scoop of ice cream in summer season.
